I went to Lollapalooza this past weekend and still feel so energetic. Salads are always my go to meal and I love how flexible they are. I always say my mood changes with the music I listen to, but my mood also changes with the salads I eat. I wanted a salad that is light, but filling. The summer should be filled with simple salads, in my opinion. I needed a quick salad because I am getting ready to go back to school this weekend and have to pack up all of stuff. Shaving brussels sprouts gives a nice crunch for a salad and is a little spicy to keep me going. I never want to overpower the elegance of brussels sprouts, so I kept the salad dressing very light by using just lemon and olive oil.
Ingredients
- 1 lb. of brussels sprouts
- 2 tablespoons of Roma tomato
- 2 tablespoons of Fuji apple
- 1 tablespoon of shaved almonds
- 2 tablespoons of olive oil
- Half of a Meyer lemon
- Pinch of sea salt
- Pinch of pepper
- 1/4 cup of Parmesan Reggiano cheese
Instructions
- I began toasting my almonds on the stove
- Wash the brussels sprouts and remove the dark leaves
- Shave the brussels sprouts using a mandolin
- Dice the apple and tomato
- Mix the olive oil and the lemon together with a pinch of salt and pepper
- Toss all of the ingredients together
- Top with almonds and Parmesan Reggiano cheese
